Last night Ben was feeling very pepinish, so he, Otto, and I enjoyed a delicious gourmet meal that took only 45 minutes to prepare start to finish. We had crispy chicken thighs browned on the cooktop, then finished in the oven, smothered in a mushroom scallion wine glaze, served over tender rice pilaf, plus a side of gently poached fresh asparagus with a balsamic cream sauce. Served with a sweet white wine (Tang for Otto). My, my, my! I am one lucky lady!
